Sao del Coster
Sao del Coster is situated in the town of Gratallops in the Priorat region of Catalonia, Spain.
Saó del Coster is a wine making project created in 2004 by a group of Swiss friends passionate about Priorat and its wines. Joel Chevallaz and Michel Grupper currently lead a group of shareholders and friends, running a responsible winery which is committed to the terroir, and is in the adaptation process of integrating biodynamic principles.
Saó del Coster is currently producing in two plots of land, Planassos and La Pujada, both located in Gratallops. In the first, we grow grapes for a part of the “S”, and all of the Terram and Planassos. In La Pujada, a small plot of old Carignan vines, we grow grapes of the single-variety wine of the same name.
Both in the lands we own as well as the ones we rent, where we grow the grapes for the “S” and the Pim Pam Poom, Saó del Coster works with the same minimum intervention philosophy, without chemical products and carrying out all the necessary biodynamic treatments.
Since 2010, Saó del Coster has been working on a project in Galicia, producing “X de Xeito”, a 100% Albariño (Rias Baixas appellation).
